Salmon carpaccio

Salmon carpaccio

Ingredients

  • 4 slices of MOWI Rich smoked salmon slices
  • 1 tbsp of beetroot juice (concentrated)
  • A handful of chopped dill
  • ½ lemon (juiced)
  • 1 spoon sugar
  • ¼ red onion (diced)
  • ½ bulb of fennel
  • 1 sliced apple
  • A few capers
  • 2 pickled beetroots (sliced)

Method

    Marinate the smoked salmon slices with the lemon juice, sugar, salt and beet concentrate and leave for a few hours.

    Cut the apples into cubes along with the dill, sliced beetroot and fennel.

  3. 3

    Once marinaded, remove the fish and add it to the top of the prepared ingredients. Sprinkle over dill and capers.
