- Cook Time: 10 to 15 minutes
- 4 Salmon fillets weighing about 150-175g each
- 1 Tablespoon olive oil
- 1 Pinch of sea salt
- 2 Tablespoons olive oil
- 1/2 Zest and juice of half an orange
- 1 Zest and juice of one lemon
- 1 Teaspoon cumin seeds
- 1 Dessert spoon of honey
To cook the salmon heat the olive oil in a pan. Season the salmon lightly with a little sea salt.
Add the salmon fillets skin side down and cook covered with a lid for 5 minutes. Carefully turn the salmon over and cook for a further 5 minutes, remove from the pan and keep warm.
Turn up the heat and cook the fruit zest for a few minutes until soft. Add the cumin seeds and cook for a minute.
Add the honey and allow to bubble for a minute then add the citrus juices, stir then pour over the salmon.
Delicious with light fresh flavours of cumin and orange.
