Ingredients
- 2 packs Mowi raw Salmon
- Orange – juice & zest of 1 orange for glaze + 1 orange for slicing
- 30g Dried cranberries
- Salt & Pepper – to season
- ½ tsp Ground allspice
- 60ml Gin
- 250ml Cranberry juice
- 10-12g Ginger – finely chopped – small piece
- 3 tbsp Sugar
- Fresh dill chopped – small bunch
- 1 tbsp Olive oil

In a sauce pan place the gin, cranberry juice, allspice, dried cranberries, orange juice, sugar, ¾ of the ginger, and ¾ of the orange zest. Season with salt & pepper and bring to the boil. Reduce to a simmer and cook until the sauce becomes a syrupy constancy.

While the sauce is cooking, slice the orange and lay flat on a greaseproof lined baking tray. Place the salmon on top of the sliced oranges and brush with olive oil. Season with salt & pepper then sprinkle over the remaining ginger and orange zest. Scatter over the chopped dill and place the salmon in a preheated oven (200C/180C fan/gas mark 6) and cook for 20 minutes or until the salmon is cooked through.

Remove the salmon from the oven and drizzle over the spiced cranberry glaze
